A short map of the transformations behind every coffee seed.
Processing is a language
Coffee is a seed inside a fruit. What happens before, during and after the seed is separated from the fruit leaves a trace in the cup.
Natural, washed and honey are common names for different approaches, but a name cannot replace tasting: variety, ripeness and drying conditions also shape the result.
Roasting is reading the seed
Heat drives chemical reactions that create aroma, colour and structure. Roast level balances the coffee’s character and its intended brew method.
Water is the final medium carrying those compounds into the cup. Roasting and brewing are therefore two consecutive chapters.
